Black Bean Soup
Ingredients
200g black beans
1500 ml water
1 onion
1 tablespoon oil
2 stalks of celery
1 lemon
2 tablespoons butter
2 tablespoons flour
2 hard-cooked eggs
1/2 teaspoon mustard
Pepper, salt and paprika
1 teaspoon butter
1 teaspoon flour
Action
a. Soak the beans over night.
b. Drain them and cover with the cold water.
c. Add sliced onion, which has been browned in the oil.
d. Add stalks of celery broken into 2 cm pieces.
e. Simmer until beans are soft, adding more water from time to time.
f. Press through a sieve, again bring to boiling point.
g. Add seasoning of mustard, pepper, salt and paprika to taste.
h. Bind with butter and flour to prevent the soup from separating.
i. Cut the eggs and lemon in thin slices, and add these to the strained soup just before serving.
Cream Corn Soup
Ingredients
1 canned corn
500 ml milk
1 very small onion
Celery tops
1 tablespoon butter
1 tablespoon flour
Salt and white pepper
Shredded blanched almonds
Whipped cream
A small piece of pimento
Action
a. Cook all together in a double boiler for 30 minutes.
b. Press through sieve to get all the pulp possible.
c. Rub together the butter and the flour.
d. Add this to milk and reheat.
e. When ready to serve, add salt and pepper to taste.
f. Put one or two almonds in bottom of soup dish, and on top of soup some whipped cream.
g. Decorate a small piece f pimento on top of the cream.
Cream of Pea Soup
Ingredients
1 canned pea
500 ml boiling water
2 teaspoons cornstarch
1000 ml milk
1 teaspoon butter
1/4 teaspoon beef extract
1/2 onion (grated)
Salt and pepper
Action
a. Mash half of the peas.
b. Heat all with the liquor.
c. Put other ingredients in double boiler.
d. Mix in cornstarch with a little cold milk.
e. Cook a few minutes, then add peas.
f. Serve at once.
Potato Soup
Ingredients
3 medium sized potatoes
Salt water
1000 ml milk
1 tablespoon flour
2 tablespoons butter
1 tablespoon minced onion
1 teaspoon salt
Few grains of pepper
1/2 teaspoon celery salt
Action
a. Wash and pared and cook the potatoes in the slightly salt water.
b. Drain and rub through strainer.
c. Make a thin white sauce in a double boiler with milk, flour, butter, onion, salt and pepper.
d. Cook for 10 minutes.
e. Add celery salt and mix this with the strained potatoes.
